Description

'Nduja Americana is La Quercia's version of a classic spicy Calabrian spreadable salami. Made from fully cured prosciutto and speck, sea salt and red chili pepper, this southern Italian favorite packs a punch. Shaped into a sausage shape, the cured pork and spices are ground so that you have a uniquely spreadable salami that is so versatile. Spice up a pasta sauce, grilled cheese, burger, pizza, crostini, or tacos. Wonderful just slathered on warm bread or a cracker. If you find that it is too spicy, mix with ricotta and warm in a saucepan to make it milder and just use it the same way as suggested above.

La Quercia has replicated the Italian traditions of crafting fine salumi - cured meat (primarily pork) products - at home, here in the USA. Herb and Kathy Eckhouse started La Quercia, in Norwalk, Iowa, to create premium quality American prosciutto. Their appreciation for prosciutto grew out of the three and a half years they lived in Parma, Italy. Their ambition to create their own came from their desire to take the bounty that surrounds them in Iowa to its highest expression. They wanted to contribute to the growth of premium artisan-made American foods by offering fine quality, dry cured meats. Iowa, with its abundance, was the natural place to do this.
