Description

Sumac is an incredibly middle eastern spice which comes from a red berry that is used to enhance the flavor of the cooking. The main component of its flavor resembles what many feel is a nice, light lemon flavor with a subtle tart nuance. The very deep-colored red berries are typically ground up into a very fine powder, usually incorporated into the base flavor of a dish or it is sprinkled on various meats.

Here's a recipe to get your started using this wonderful seasoning:

Sumac-Dusted Oven Fries

Serves 2 to 3

4 medium-sized russet potatoes
1 tablespoon olive oil
Salt
2 tablespoons sumac
Preheat oven to 350F. Peel potatoes. Slice the potatoes into 1/2-inch strips. Toss with olive oil and a pinch of salt. Bake for 30 to 35 minutes, stirring every 10 minutes.
Roughly chop the reserved potato in half. Cook in salted boiling water until soft. Drain and roughly mash with a fork.
When the fries are done, remove from oven and toss with sumac. Serve with your choice of spread on the side.

HOW DO YOU USE IT AS A SALT SUBSTITUTE IF IT IS SOURY MORE THAN SALTY

If you use genuine Sumac without additives, when added to meat, poultry or even fish before cooking, the reaction during the cooking process enhances the salty taste of the Sumak, allowing you to reduce or not use salt at all.

WHAT IS THE SUMAC TRADITIONALLY USED FOR?

Sumac has been used for centuries by cooks and by traditional herbalists and healers. It is one of the main ingredients in Za'atar and very popular on Hummus and other middle eastern dishes.

DO I NEED TO ALWAYS COOK IT BEFORE EATING?

No, Sumac can be added to dishes and eaten without any cooking process whatsoever. You can just sprinkle it on top of Hummus or season salads. The amount you should use when adding to any of these dishes is to taste.

Description

Sumac refers to any flowering plant that belongs to the Rhus genus or the Anacardiaceae family, which often consist of small shrubs and sumac trees that produce bright red fruits known as drupes. These plants are grown around the world but are especially common in East Asia, Africa and North America. Some other popular variations include the staghorn sumac, African sumac, smooth sumac and fragrant sumac.

The medicinal properties of sumac have been recognized for thousands of years, particularly in regions like South Asia and the Middle East, where sumac was commonly grown. In holistic medicine, it has been used to treat a variety of ailments.

If you're lucky enough to find fresh sumac in your area (staghorn or smooth sumac are the most common types in North America), use it to make sumac-ade. It's made from crushed sumac berries steeped in cold water. Its flavor is a delicious cross between lemonade and cranberry juice.

To use this versatile spice, mix it with olive oil and then use it as a coating when you oven roast your favorite vegetables - it's especially great with cauliflower. Or add it to Middle Eastern spreads like hummus and Baba Ghanoush, or simply sprinkle it on top for a splash of color. You can also blend sumac with complementary spices to make a rub for meats or fish. A sprinkle of sumac is also a great way to perk up the flavor of popcorn or bread-dipping oil.

While it has a diverse flavor profile, sumac blends surprisingly well with other spices such as allspice, chili, thyme and cumin. It's also used to make Za'atar, a Middle Eastern spice blend, that includes oregano, thyme and sesame seeds. And for a completely different take, add sumac spice to a mixture of simple syrup and sparkling water. Stir in crushed mint sprigs and enjoy a refreshing summertime drink.
