Description

Tom Muller the world's top olive oil expert and author of the New York Times best seller book "Extra Virginity: the Sublime and Scandalous World of Olive Oil", wrote for ELEONES Early Harvest: "I've rarely tried an oil from Greece - or from anywhere else - with this level of complexity and, well, "beauty"" and he added "One of the best oils I've ever smelled or tasted." ELEONES Early Harvest is one of the richest olive oils in the world with regards to total phenolic value according to the Department of Pharmacognosy & Natural Products Chemistry of the University of Athens. The high levels of oleocanthal and oleacein in ELEONES Early Harvest present important biological activity and they have been related with anti-inflammatory, antioxidant, cardioprotective and neuroprotective activity. ELEONES Early Harvest belongs to the oil category that protect the blood lipids from oxidative stress. Olive variety: "Hondroelia" of Halkidiki found only in Northern Greece. Harvesting and pressing method: Harvesting of the first unripe olives is conducted in mid September and lasts for a couple of weeks. The olives are handpicked one by one only from carefully selected olive groves of Halkidiki. They are taken to the mill for pressing hours after harvesting in accordance with the ELEONES quality standards. Colour: Shades of bright green to bright greenish yellow. The bright green comes from the chlorophyll contained in unripe olives. Over time, the bright green becomes a bright greenish yellow. Aroma: extremely complex and rich, with green cut grass immediately perceptible, then clear, rich olive-fruitiness, accompanied all along by an aromatic tingling in the nostrils. Taste: Pronounced green vegetable notes, followed by green olive fruit, and very slow-developing bitterness and pungency that have an almost unbelievable persistency.
