Keep moist, not letting the seeds dry out between watering. DO NOT cover the seeds with soil! Also, the SOIL should be kept consistently warm at 70-85F. Cool soils, below about 60-65F, even just at night, will significantly delay or inhibit germination. Additionally, overly warm soils, well above 90F, can inhibit germination and provide ideal conditions for seed rot. Over watering can cause fungal growth which leads to seed rot.
Excess water can also bury seeds deep in the soil where they will not be able break the surface. Water when the soil surface just begins to dry. Please keep the container covered with a plastic bag on the top of the fridge where the room temperature is higher, therefore the soil temperature is perfect for germination. Once the seedlings are about one inch tall, you can remove the cover for 2-3 hours so they adapt to the sun light, temperature and air humidity level.
At this time, you may place the container closer to the sun light. But keep them covered at night until they get stronger. When the plants reach about 2" tall, transplant them into pots. If transplanting outdoors, make sure to harden off seedlings by exposing them to only filtered sunlight for up to 1-2 weeks.

A popular perennial herb that easily grows from seed is Spearmint. Mentha spicata reaches 12 - 36 inches in height, and it can spread indefinitely. Confining it to a container is recommended if you want to control the amount of spread. Spearmint has spikes of pink colored flowers that appear in early summer.
